  • 1 Teaspoon cayenne
  • 2 dry red chiles, crushed
  • 2 Tablespoons apple cider vinegar
  • Salt, to taste
  • Juice of 1 lime

In a small bowl, combine the broth, red-pepper flakes, oyster sauce, wine, and soy sauce. In a large pot of boiling, salted water, cook the linguine until just done, about 12 minutes. Drain the linguine.

In a large frying pan or wok, heat 1 tablespoon of the oil over high heat. Sprinkle the shrimp with 1/8 teaspoon of the salt. Add the shrimp to the pan cook until just done, about 3 minutes. Remove the shrimp. Heat another tablespoon oil over high heat. Sprinkle the squid with the remaining 1/8 teaspoon salt. Add the squid to the pan and cook for 30 seconds. Remove. Heat 1/2 tablespoon of oil and add the eggs to the pan. Cook, stirring, until set, about 20 seconds. Remove and cut into strips.

Heat the remaining 2 tablespoons oil over high heat. Add the linguine, bean sprouts, and the sauce mixture. Cook, stirring, until the sauce thickens slightly, about 2 minutes. Add the shrimp, squid, and eggs. Cook until heated through, about 1 minute longer. Toss with the chives and serve immediately.

Last week I decided to buy lots and lots of sea food. I was craving it like never before. This is a little weird since I eat fish and sea food every week. But let’s not get into that – overanalyzing is never helpful. Long story short I went and bought about 4 kg fish and sea food and ate it almost every day of the week.

Don’t know about the guys in Dirty dancing, but I truly had the time of my life.

You already saw the salmon with asparagus recipe and here comes another recipe from the sea for my clean eating challenge: Shrimp & calamari in tomato garlic sauce.

This is the one dish that can distract me from any goal or activity in my life. Seriously it’s that seductive. My sister makes this low carb dish pretty often when I say I will go vegan for a week. I don’t know for sure if she’s trying to sabotage me, but it definitely seems like it. I always end up eating more than her. And I honestly never regret it.

But in my defence, can anybody resist sea food in tomato garlic sauce?

I mean who can resist anything drowned in sweet flavorful and super garlicky tomato sauce? With some basil in it? Come on. Alright I will probably be able to resist a cheesecake or a cookie drown in that, but I’m not even sure I can make that promise.

Luckily the biggest and tastiest distraction in my life is also very healthy and helps me renew my beauty. Makes me feel like J.Lo.

Preparation

Step 1

Peel and devein shrimp, saving heads and/or shells. Finely chop shrimp set aside. Remove skillet from heat and carefully add tomatoes and 1 cup stock (mixture may sputter). Return to heat and cook, stirring occasionally, until sauce is beginning to thicken, about 3 minutes. Add nduja, using a wooden spoon to work it into the sauce. Reduce heat and simmer, stirring occasionally, until flavors have melded, about 3 minutes. Stir in reserved shrimp and cook, stirring occasionally, until opaque, about 2 minutes.

Step 3

Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente (pasta will still be opaque and very firm in the center). Drain pasta, reserving 1½ cups pasta cooking liquid.

Step 4

Add pasta and 1 cup pasta cooking liquid to sauce and cook, tossing often and adding more cooking liquid to help finish cooking pasta, until pasta is al dente and sauce is thickened (but still saucy) and coats pasta, about 5 minutes. Add lemon juice and ¼ cup parsley toss. Taste and season with salt and pepper. Serve pasta topped with more parsley.

Step 5

Do Ahead: Stock can be made 1 day ahead. Let cool cover and chill. Wrap tightly and chill shrimp separately.

  • 8 whole Large, Whole Squid, Cleaned
  • 3 cloves Garlic, Finely Chopped
  • 1 Tablespoon Olive Oil, Or More As Needed
  • ½ pounds, 2-⅝ ounces, weight Fresh Or Frozen Cleaned Shrimp
  • 6 tablespoons, 2 teaspoons, 4-⅝ pinches White Wine
  • 2 Tablespoons Parsley, Chopped
  • 2 Tablespoons Parmesan Or Grana Padano Cheese, Grated
  • 2 Tablespoons Rice, Or More As Needed
  • 2 Tablespoons Homemade Breadcrumbs
  • FOR THE SAUCE:
  • 2 Tablespoons Olive Oil
  • 2 cups, 1 tablespoon, 2 teaspoons, 7-⅛ pinches Tomato Puree
  • 1 bunch Parsley, Oregano, Rosemary, Chopped
  • ½ Tablespoons Sugar (optional)

Preparation

1. Chop squid tentacles.
2. Briefly sauté garlic in olive oil, being careful that it does burn. Add squid tentacles and frozen shrimp, stir.
3. Stir in wine, simmer for 5-8 minutes on low heat or until ¾ of the liquid evaporates.
4. Add parsley, stir, remove from the flame.
5. Add cheese, rice and bread crumbs, stir and combine to obtain a thick, uniform filling for the squid.
6. Fill squid with the shrimp mixture and close each squid with a wooden or metal toothpick. If some of the filling is left over (in case squid are smaller), it can be added to the sauce.
7. Sauté stuffed squid in olive oil for 2 minutes on each side or until golden. When done, place the squid into an ovenproof dish suitable for oven baking.
8. Prepare sauce with the same oil in which squid was sauteed. Add tomato puree, spices and, if necessary (in case that the puree is tart), sugar. Stir and pour over the stuffed squid.
9. Bake squid, covered, in the oven for 35-40 minutes at 180ºC (about 355ºF).
