I passed the sugar and lemon peel through the robot and made them into powder.

Bake for 5 minutes. On high heat, then reduce the heat and keep them for a maximum of 7-10 minutes until they turn golden brown.

Remove from the oven and leave on a grill to cool completely before filling.
