Over the crunchy meringue inhabitants.

INGREDIENTS for meringue top

  • 4 egg whites
  • 150 gr sugar (I used caster sugar, you can use powdered sugar very well)
  • 1 tablespoon starch
  • 1 tablespoon lemon juice (wine vinegar can also be used)

  • 4 yolks
  • 500 ml of milk
  • 3 tablespoons flour
  • 2 tablespoons starch
  • 120 gr sugar
  • 100 gr butter (at room temperature)
  • vanilla essence or vanilla pods

for topping

pears, nectarines, bananas and candies m & ampm

WORK PLAN mini pavlova with vanilla cream

Beat the egg whites, then gradually add the sugar and mix until you get a meringue that stays sticky and shiny. It must be mixed well until the caster sugar dissolves. Then sprinkle the sifted starch and lemon juice and lightly incorporate with a spatula. For pictures step by step click here.
Draw on the baking paper 5 circles with a diameter of 8-10 cm, then place the egg whites in this circle, so that they look like some mini countertops.

Leave in the hot oven at 110 degrees for 2 hours.

For the cream, mix the yolks together with the sugar. Pour 25 ml of milk and mix.
Add the flour with the starch, mix continuously with the whisk (so as not to form lumps), then pour another 25 ml of milk and mix well.
We boil the rest of the milk (450 ml of milk) together with the vanilla essence or the seeds from the vanilla pod. When the milk has started to boil, add the yolk mixture and mix continuously with the whisk.

Keep on low heat until you get a pudding. Let it cool.
Mix the butter, then gradually add the pudding and mix until you get the final cream.
Cover the meringue top with this cream

then with a generous layer of fruit. I chose nectar, pears, bananas, grapes and candies.

Absolutely delicious these mini-pavlova. They simply melt in your mouth.
Enjoy your mini pavlova with vanilla cream and fruit!

Don't be swayed by appearances. Not even when it comes to a recipe. It sounds complicated, but it's not! It looks like something high in calories! Is not. Tiramisu with pistachios and fruit mousse is.

Mini Fruit Tarts

Slowly, slowly, nature begins to take on color. The sun also becomes much friendlier and happier and invites us to long and frequent walks. So all we have to do is prepare easy recipes, with minimal effort but which will make us happy and satisfy our tastes and appetites.

In a bowl put sifted flour and mix with salt.
Separately, in another bowl, rub the butter well until it becomes frothy, add the sugar and mix until it melts. Add the beaten egg and mix until incorporated. Put the flour all at once and mix until you get a dough that you do not work in excess (it becomes elastic and hardens after baking).

We give it a spherical shape, put it in cling film and keep it in the fridge for 15-30 minutes or 10-15 minutes in the freezer. Preheat the oven to 200 degrees c.

A 24-26 cm tart or 6 10 cm mini tarts will come out of this dough.

Grease the trays with butter and line them with flour. We put the dough spread on the bottom and on the sides of the trays (we lightly prick the dough on the bottom of the forms with a fork).

Bake for 5 minutes. On high heat, then reduce the heat and keep them for a maximum of 7-10 minutes until they turn golden brown.

Remove from the oven and leave on a grill to cool completely before filling.

These mini-tarts that I want to present to you are loved by everyone as well and this is because they can be made with a great variety of creams and fillings, and with the addition of fruit you feel like eating.
